Verjus pure sour is read with 5g sugar/100ml. It is preferably used as a histamine-free alternative to vinegar and is ideal for salad marinades, with game and fish or for goulash and stews. Verjus pur sour is gently filtered to retain as much of the flavour as possible. The advantages for the consumer are a high proportion of flavour-enhancing, natural tartaric acid and a polyphenol content that is far higher than that of red wine.
