Verjus pur “fruity-mild” is a variant that is harvested shortly before the grapes soften and, with 9.5g sugar/100ml, has a significantly milder and sweeter flavour structure than the acidic variants.
The flavour is reminiscent of grapes, yellow apples and a hint of pear.
The fruity verjuice variant is particularly suitable as a base for refreshing thirst quenchers, desserts, starters and sauces, as well as for fruity mixed drinks and cocktails. Thanks to its pleasant acidity and slightly bitter astringency, verjus is an excellent substitute for alcohol.
Pure fruity-mild verjus is often used instead of lemon juice, as verjus provides a pleasant acidity but hardly develops any flavour of its own, instead supporting the flavour nuances of the other ingredients thanks to its high proportion of tartaric acid.
Verjus pure fruity mild is alcohol-free, histamine-free and vegan.
